Ingredients

  • 1 lb. fresh asparagus spears, trimmed
  • garlic cloves
  • dill week
  • cayenne pepper
  • 2 1/2 cups vinegar
  • 1/4 cup pickling salt
  • 2 1/2 cups water
  • Vinegar + water = 5 cups. This could be enough for at least 4 pints??

Step 1

Pack asparagus into sterilized jars to within 1" of top. Add to each jar garlic, dill week and cayenne pepper to taste.

Bring vinegar, pickling salt and water to a boil, pour over asparagus, wipe rims clean and screw on lids.

Process in boiling water bath the at least 10 minutes.
