German Apple Pancake

Ingredients
- BATTER:
- 1/2 C flour
- 1/2 tsp baking powder
- 1 TBL granulated sugar
- 1/8 tsp salt
- 1/8 tsp grated whole nutmeg
- 1 C egg substitute
- 1 C fat-free milk
- 2 TBL butter, melted
- 1 tsp vanilla extract
- APPLE MIXTURE:
- cooking spray
- 1/2 C granulated sugar, divided
- 1/2 tsp grd. cinnamon
- 1/2 tsp grated whole nutmeg
- 1 C thinly sliced Granny Smith apple
- 1 TBL powdered sugar

Preparation
Step 1
to prepare BATTER:
lightly spoon flour into dry measuring cup
level w/ knife
combine dry ingredients
combine liquid ingredients - stirring w/ whisk
add liquid mix to flour mix, stirring w/ whisk
let stand 30 min
preheat oven to 425
to prepare APPLE MIXTURE:
coat bottom & sides of 10" ovenproof skillet w/ cooking spray
combine 1/4 C granulated sugar, cinnamon & nutmeg
sprinkle evenly over bottom & sides of pan
arrange apple in even spokelike layer in pan
sprinkle apple w/ remaining 1/4 C sugar
cook over med heat 8 min or until mixture bubbles
slowly pour batter over apple mix
bake 425 for 15 min
reduce oven temp to 375 (do not remove pancake from oven)
bake an additional 13 min or until center is set
carefully loosen pancake w/ spatula
gently slide pancake onto serving platter
sift powdered sugar over top
cut into 6 wedges
serve immediately
