Ingredients
- 3 TBsp butter
- 6 chopped shallots
- 2 cups shredded gruyere (approx 8 oz)
- 1 cup heavy cram
- 1/4 cup chopped chives
- 1 tsp celery salt
- 1/4 tsp salt
- 1 thinly sliced 3 lb head cauliflower

Preparation
Step 1
in large skillet, melt butter over medium-high heat. add shallots and cook, stirring occasionally, until lightly browned ( approx 10 min). Transfer to large bowl and mix with cheese, cream, chives, and slats. Add cauliflower and gently toss. Arrange in greased 9x 13 baking dish. Bake @ 375 until browned and very little liquid remains, 40-45 min. Sprinkle with chopped chives and let stand 10 min before serving.
