Grilled Herbed Meatballs

Ingredients
- 1/4 cuo buttermilk
- 1 cup torn pieces of crustless white bread
- 1 Tablespoon olive oil
- 1/2 yellow onion, finely diced
- 1 teaspoon salt, plus more to taste
- 1 pound ground beef
- 2 bacon slices, finely diced
- 2 tablespoons chopped flat leaf parsley
- 1/4 teaspoon chopped fresh rosemary
- 1/2 teaspoon thyme
- freshly ground pepper to taste

Preparation
Step 1
Prepare a medium hot fire in a grill.
In a bowl, combine the buttermilk and bread and stir until completely moistened. Set aside.
In a small saucepan over medium-high heat, warm the olive oil. Add the onion and a pinch of salt and cook, stirring occasionally, until the onion is softened, about 6 minutes, reducing the heat as needed to prevent browning. Let cool to room temperature.
Add the onion, ground beef, bacon, parsley, rosemary, thyme, 1 teaspoon salt and pepper to the bowl with the bread mixture. Using a spoon or your hands, gently mix just until the ingredients are combined.
Spray the wells of the Meatball Grill Basket with nonstick cooking spray. Using 3 tablespoons of the meat mixture for each meatball, form the mixture into balls in the bottom half of the wells(the side with the handle).
Close the lid on the basket and place on the grill and cook for about 10 minutes. Turn the basket over, cover the grill and continue cooking until the meatballs are cooked through, about 10 minutes more.
