Ingredients

  • Peppers

  • 5

    large poblano peppers

  • 1

    lb ground beef or turkey

  • 1

    can corn

  • 1

    can black beans

  • 1

    can diced tomatoes

  • 1/4

    C corn meal

  • 1/2

    C salsa

  • 1 to 2

    (depends on taste) chile powder

  • salt, pepper

  • Topping

  • 1/2

    C velveeta or cheez whiz

  • 1

    can chile

  • 1/2

    C sour cream

Directions

Mix beef/turkey, drained corn, drained tomatoes, corn meal, salsa, drained black beans. Core peppers & stuff with mixture. Bake at 350 for 40 min. In sauce pan, mix the chile, cheese and sour cream until creamy. Serve over top of the peppers.
