  • 2 lbs mushrooms
  • 1.2 c (1 stick) butter
  • 1 tbs lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper. freshly ground

Preparation

Step 1

Wipe mushrooms clean with a damp paper towel.
Cut off stems even with caps.
Don't twist stems off or caps will collapse.
With a small curved knife, cut grooves that spiral out from center on each cap edges.
Melt butter in skillet until hot and foaming.
Add mushrooms, fluted side down.
Mix lemon juice and sprinkle with salt and pepper.
Toss over high heat about 3 minutes or untiol mushrooms are evenly golden.
