GRILLED MOZZARELLA AND SPINACH BLTS 0 Picture

Ingredients

  • 12 slices thick cut bacon
  • 1 medium clove garlic, finely chopped
  • 3 cups lightly packed baby spinach
  • Kosher salt and freshly ground black pepper
  • 8 slices country style white bread
  • 8 oz fresh mozzarella, sliced
  • 1 large tomato, cored and thinly sliced
  • 1 TBS EVOO

Preparation

Step 1

1. Cook bacon over medium-high heat until crisp. Drain bacon, reserve 1 TBS fat. Return pan to medium heat, add the garlic, and cook until fragrant about 30 seconds. Stir in spinach and cook until just wilted, about 30 seconds longer. Season to taste w/ salt and pepper.
2. Heat nonstick pan over medium-high heat.
3. While skillet heating, arrange spinach on top of 4 slices of bread. Top each w/ some bacon, mozzarella and tomato, sprinkle lightly w/ salt and complete each sandwich w/ a slice of the remaining bread. Brush both sides of the sandwich w/ olive oil.
4. Put the sandwiches in skillet. Top w/ another heavy skillet to weight down the sandwiches and cook until cheese is melted, 3-6", turning sandwiches once.
Remove from skillet and serve.
