CUCUMBER****Creamy Cucumbers 1 Picture

Ingredients

  • 1/3 cup 2% Green yogurt
  • 1/2 tsp kosher salt
  • 1 tablespoon minced fresh dill weed (could handle some mint too, I'm sure)
  • freshly ground pepper to taste
  • 1 cup thinly sliced unpeeled cucumbers (I used six small pickling cucumbers, sliced thinly on the mandolin)
  • 1/4 red onion, thinly sliced and separated into rings
  • 1 clove garlic, minced - I didn't add this the first time because the chicken was already garlicky but it could certainly handle it

Preparation

Step 1

Layer sliced cucumbers and salt in a colander and allow to drain for half an hour or so. Rinse well and drain again. Dry the cucumbers if you think of it.

In medium bowl, mix everything except the cucumbers until well blended. Stir in the cucumbers and mix again.

Cover and refrigerate at least 4 hours or until chilled.
