Ingredients
- 3/4 cup whole milk ricotta cheese, divided
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 Tbsp pesto from a jar
- 4 whole roasted peppers from a jar
- 12 slices white bread

Preparation
Step 1
1. Combine 1/2 cup of the ricotta with salt and pepper in a mixing bowl. Combine the remaining 1/4 cup ricotta with pesto in another mixing bowl.
2. Blot peppers dry with a paper towel and slice them so you have 4 flat wide pepper pieces. Place one pepper on a slice of bread. Top with 2 Tbsp of the plain ricotta. Cover with another slice of bread and top with 1 3/4 Tbsp of the pesto-seasoned ricotta. Cover with another slice of bread and cut in half diagonally. Repeat with remaining bread and fillings to make 4 triple-decker sandwiches and serve.
