Ingredients
- 1 tablespoon butter
- 1/2 small onion, chopped
- 2 green onions, chopped
- 1/2 cup reduced sodium chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon freshly ground nutmeg
- 2 packages (10 ounces each) frozen leaf spinach, thawed and squeezed dry

Step 1
In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon. Chop spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot.
