Ingredients

  • 1 tbs olive oil
  • 2 cups converted rice
  • 1 tbs minced fresh garlic
  • 2 1/2 cups water
  • 1 14 oz can petite diced tomatoes
  • 1 tsp kosher salt
  • 1/2 cup chopped fresh parsley
  • black pepper to taste

Preparation

Step 1

Heat oil in pot over medium. Stir in rice and garlic and cook until fragrant, 30 seconds. Stir in water, tomatoes and salt; bring to a boil. Cover pot, reduce heat to low and cook rice until tender, 20 minutes; remove from heat and let stand 5 minutes. Stir in parsley and season rice with pepper.
