  • 1 1/2 cups (9 ounces) milk chocolate chips
  • 1 cup heavy cream
  • 1 egg, lightly beaten
  • 1/4 teaspoon salt
  • 1 prepared 8-inch graham cracker crust
  • 32 to 34 regular marshmallows

Preparation

Step 1

Preheat oven to 350 degrees F. Place chocolate chips in a small bowl. Heat cream in small saucepan over medium heat until scalded, but do not boil. Pour over chocolate chips and let stand for 1 to 2 minutes. Stir until smooth and shiny. Incorporate a tablespoon or two of chocolate mixture into egg to temper then add egg and salt to bowl and stir to incorporate fully until smooth. Pour into prepared crust and bake for 23 to 27 minutes until edges are set but center is still slightly jiggly. Remove from oven, top with marshmallows, pressing them together tightly. Place 5 to 6 inches under broiler for about 1 minute, watching carefully to avoid burning, until marshmallows have browned. Allow to cool partially and set before serving. If pie has cooled completely, microwave slice for 10 seconds or so to soften marshmallows before serving.


Tip: Tip: Grease knife to slice cleanly through marshmallow topping.
