Ingredients

  • 2 tbs olive oil
  • 1 lb fresh green beans, cut into 1 inch pieces
  • 1/2 cup water
  • 1/2 cup thinly sliced shallots
  • 2 cloves garlic, thinly sliced
  • 1/4 tsp red pepper flakes
  • 1 cup halved grape tomatoes
  • 1 tbs red wine vinegar
  • salt and pepper

Step 1

Heat 1 tbs oil in skillet over medium- high. Add green beans and cook until starting to brown, 3 minutes. Add water, cover skillet and reduce heat to medium; cook beans 3 minutes. Remove lid and push beans off to one side of skillet. Sautés shallots, garlic, and pepper flakes in remaining 1 tbs oil in cleared half of skillet, 1 minutes. Stir in tomatoes and cook until they start to soften and release some liquid 2 minutes. Off heat, stir in vinegar, then season beans and tomatoes with salt and black pepper,
