Ingredients
- 1 tablespoon vegetable oil, divided
- 1 pound firm-fleshed white fish fillets
- Salt and pepper, to taste
- 1/3 cup chopped onion
- 3 1/2 tablespoons chopped fresh parsley
- 1 1/2 teaspoons grated lemon peel
- 1 1/2 teaspoons grated orange peel
- Orange and lemon slices, for garnish
- Parsley sprigs, for garnish

Preparation
Step 1
Using a paper towel, lightly grease a slow cooker with some of the vegetable oil; salt and pepper fish fillets to taste and place in a slow cooker. Sprinkle with chopped onion, parsley and grated orange and lemon peels; drizzle with remaining oil. Cover and cook on LOW for 1 1/2 hours. Serve fish garnished with orange and lemon slices and a sprig or two of fresh parsley.
SERVING SUGGESTION: Whole wheat couscous and steamed green beans.
