Ingredients
- 1 1/3 cups sugar
- 2 eggs
- 2 egg whites
- 1/2 cup unsweetened apple sauce
- 1/3 cup canola oil
- 1 cup flour
- 1 cup whole wheat flour
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ground allspice
- 1/4 tsp. cloves
- 3 cups carrots, shredded
- 1/2 cup golden raisins
- 6 oz. reduced fat cream cheese
- 1 tbsp. butter, softened
- 1/2 tsp. vanilla
- 3 cups confectioners sugar
- 1/4 cup walnuts, chopped
- 3 tbsp. coconut, toasted

Step 1
Using a large mixing bowl, combine the sugar, eggs, egg whites, unsweetened applesauce and oil together until smooth. Mix the fours, baking soda, salt and spices and combine with the egg mixture and mix well. Stir in the carrots and raisins. Transfer mixture into a 13x9 baking pan prepared with non stick cooking spray.
Place in the oven and bake at 350 degrees for approximately 30-35 minutes.
Remove from the oven and allow to cool on a wire rack.
For frosting, beat the cream cheese, butter and vanilla until smooth, in a mixing bowl. Then mix in sugar and frost the cake. Top with walnuts and coconut. Place in the refrigerator to chill.
