  • Peanut Oil
  • Salt
  • Pepper
  • other seasonings

Preparation

Step 1

Peel potatoes...unless you like them with skins
Cut potatoes into 1 cm x 1 cm strips
Place cut potatoes into large bowl, cover with cold water and place in fridge for 2-3 hours (may be longer)
drain potatoes and pat completely dry on paper towels
Heat oil to 325 degree (at least 2 inches deep)
place a handful of raw potato into oil for 3-4 minutes. Fries will still be white/light-colored and very soft.
Remove to paper towels and pat completely dry. Allow to cool to room temperature.
Heat oil to 375-400 degrees (don't exceed 400)
Place cooled, partially cooked potatoes into oil. Fry 4 minutes until golden-brown.
Remove to cool on paper towels and sprinkle with seasonings
Serve warm
