Ingredients

  • 3/4 cup sugar
  • 1/4 cup margarine or butter
  • 1 tsp. vanilla
  • 1 large egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 cup non-fat milk
  • 2 cups frozen raspberries
  • 1 tsp. confectioners sugar

Preparation

Step 1

Preheat oven to 350 degrees and prepare a 9 inch round cake pan with cooking spray.
Combine sugar and butter in a bowl with electric mixer and blend until pale and fluffy. Beat in vanilla, then egg. Stir together flour, baking powder, and salt in a separate bowl. Alternate adding flour mixture and milk to batter and stir in raspberries. Place batter in prepared pan.
Place pan in oven and bake for approximately 45 minutes. Remove from heat and allow to cool for 10 minutes. Unmold, and cool and top with confectioners sugar.
