Ingredients

  • 1/2 cup Challenge butter, melted
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1/4 cup sour cream
  • 2 teaspoons almond extract
  • 2 cups finely shredded zucchini, packed
  • 2 cups flour
  • 1/2 cup dark cocoa powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • For the Frosting
  • 2 cups powdered sugar
  • 2 Tablespoons cocoa powder
  • 4 Tablespoons milk
  • 2 Tablespoons Challenge butter, melted

Step 1

Beat the butter and sugars until it looks like coarse sand. Add the sour cream, extract, and zucchini and mix together.
Stir together the flour, cocoa powder, salt, and baking soda. Mix it into the butter mixture until a batter forms. Spread in a greased 9x13 baking dish. Bake at 350 degrees for 28-30 minutes. Remove and cool.
Beat together the frosting ingredients on high until a smooth and creamy frosting comes together. Spread on the brownies. Cut into 24 squares. Store in a sealed container on the counter.
