Ingredients

    tbsp olive oil

  • 3

    cups mushrooms

  • 1

    onion chopped

  • 2

    slices of bacon cut up

  • 1

    cup uncooked regular long grain rice

  • 2 1/3

    cups water

  • 1

    tbsp soy sauce

  • 2

    chicken bouillon cubes

  • 2

    cups cut up chicken

  • 1/2

    cup dried apricots

  • 1/2

    cup chopped dates

  • 1/4

    cup unsalted roasted cashews

  • green onion sprinkled over top (optional)

Directions

Heat oil. Cook mushrooms, onion and bacon 10 minutes. Stir in rice and cook 5 minutes. Stir in water, soy and bouillon. Heat to boiling, reduce heat. Cover and simmer about 20 minutes until liquid is absorbed. Stir in remaining ingredients. Cover and let stand 5 minutes before serving.
