No-Bake Oreo Ice Cream Tart

If ice cream cakes were easier to make, they'd be my go-to dessert for summer. But they require so much damn assembly, I never end up eating as much ice cream cake as I want to—until now: I've discovered a solution to making the easiest ice cream cake ever. OK, OK, it's not a true ice cream cake. It's more like a tart. There are two important shortcuts: You don't bake a cake at all, and you don't slice ice cream into layers.Instead, you create the easiest-ever Oreo crust by crushing up Oreo cookies (scrape off the frosting) in a food processor and mixing them with melted butter. Then you press that mixture into a tart pan and freeze until solid, at least 30 minutes.

Ingredients

  • 30 oreos
  • 1 stick butter, melted
  • 20 scoops assorted ice cream flavors
  • Chocolate syrup, for drizzling
  • Caramel sauce, for drizzling

Preparation

Step 1

1. Scrape off frosting from Oreos. In a food processor fitted with a metal blade, pulse cookies until they resemble fine crumbs, then add melted butter and process until combined.
Transfer Oreo crust to an 8" tart pan and press in crust until firmly packed. Freeze until firm, at least 30 minutes.
When ready to serve, scoop ice cream over tart and drizzle with chocolate syrup and caramel sauce.
