Ingredients

  • 3 eggs, separated
  • 3/4 cup sugar
  • 1/3 cup flour
  • pinch salt
  • 1 1/4 cups buttermilk
  • 2 tbsp melted salted butter
  • 1 tbsp grated lemon rind
  • 1/3 cup lemon juice

Preparation

Step 1

In large bowl, whisk egg yolks with sugar till pale. Beat in flour and salt. Whisk in buttermilk, butter, lemon rind and lemon juice.

In separate bowl, beat egg whites till soft peaks form. Fold in 1/3 into the milk mixture. Fold the remainder of the whites into the mixture.

Pour into a greased 8" glass baking dish. Place dish in a pan with hot water poured 1/2 way up the sides.

Bake at 350 degree oven for 35 minutes.
