Ingredients

  • 1 really ripe banana
  • 1 egg
  • 1/2 cup natural almond or natural peanut butter
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1 cup Spelt flour
  • 1 cup old-fashioned oats
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup ground flax
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • (for more moist cookies add 2 tbsp of unsweetened apple sauce)

Step 1

Preheat oven to 375 F. Line 2 baking sheets with parchment paper.

In a large mixing bowl, mash up your banana, then add the egg, nut butter, syrup, and vanilla. Use an electric mixer to blend all together.

In a second bowl, combine the flour, oats, coconut, flax, baking powder and baking soda. Add the wet ingredients to the dry in 3 additions, mixing well between each.

Using a 1/3 cup measure, scoop the batter onto the prepared baking sheets, leaving about 2 inches between cookies. Bake for 12-14 min, until golden brown. Cool and enjoy!

Makes 10 big cookies...I usually double this and freeze
