Ingredients

  • TOPPING:
  • 1 1/2 lb potatoes, yellow
  • 1/2 cup cheese whiz
  • 1/4 cup sour cream
  • pinch salt
  • FILLING:
  • 1 1/2 tbsp. oil
  • 8 oz ground chicken or beef
  • 1/3 cup chopped onion
  • 1 tbsp. minced garlic
  • 1 can diced tomatoes
  • 1 can red kidney beans
  • 1 can corn kernels, drained
  • 1/2 cup chicken broth
  • 1 1/2 tbsp. chili powder
  • 1/4 tsp coriander
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1 tsp chopped picked jalapeno

Preparation

Step 1

TOPPING:

Boil and mash potatoes till creamy. Add sour cream and cheese whiz and salt. Set aside.

FILLING:

Cook ground meat in oil till browned. Add onion and garlic and cook till tender, about 3 minutes.

Add remainder of ingredients and cook till thickened and tender - about 30 minutes.

Pour into 8" greased glass pan. Spread potatoe mixture on top. Bake at 425 for 15-20 minutes. Broil top for 2-3 minutes to brown.

Sit for 5 minutes and serve.
