  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini, packed
  • 2 cups flour
  • 1/2 cup dark cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups miniature chocolate chips, divided
  • For the Frosting
  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1/2 teaspoon clear vanilla
  • 1/2 teaspoon salt
  • 1/2 cup marshmallow cream
  • 2 1/2 cups powdered sugar
  • 2 Tablespoons whipping cream

Step 1

Beat the butter, sugars, sour cream, egg, vanilla, and shredded zucchini together.
Stir together the flour, cocoa powder, salt, and baking soda. Slowly add it to the wet ingredients until everything has been mixed together. Stir in 1 cup of the chocolate chips.
Pour into a greased 9x13 glass baking dish. Bake at 350 degrees for 35 minutes. Remove and let cool completely.
Beat the cream cheese, butter, and salt until creamy. Add in the marshmallow cream and whipping cream and beat again. Slowly add the powdered sugar until everything has been mixed in. Beat on high for another minute or two. Spread over the top of the cooled cake. Sprinkle with the remaining chocolate chips, if desired. Keep refrigerate until time to serve. Cut into 24 squares.
