Burger (quick simple)

This is a placeholder for eventual self ground but store bought ground works well enough. 1 lb of ground beef yields 2 burger patties. Cooking time determined by thickness, although thinner will risk it falling apart.

- 130 grams of regular or lean beef (30-20% fat) | 6 oz
- salt pepper to taste
- Egg bread or burger bun of your choice.

Insure that all implements and meat are refrigerator cold to reduce fat smearing, and to allow the patty to hold together. Do not handle the meet to much after shaping.
1. form a ball 130 grams each, do not handle meat, use a plastic ziplock bag to reduce splatter, or use wax sheets to separate. reach a consistent thickness.
2. depress the center of the burger to prevent puffing.
3. salt and pepper generously on both sides.
4. Using a cast iron pan on high, fry the individual side for a few minutes to develop a hard sear, Medium heat. Do not press or distrube burger while searing.
5. Once seared on both side flip as many times as you feel is needed to reach the desired donenness. 145F from a internal thermometer is safest it looks well done. I'd prefer more rare but has greater risk.
6. make sure you place slice cheese on top to melt slightly before finished cooking.
7. Time your burger bun to appropriate toast level. You can use the pan or a toaster.
