  • 1 cup baking mix
  • 1 1/2 tbsp. white sugar
  • 1/3 cup milk
  • 1/2 tsp. lemon zest
  • 1 1/2 cups raspberries
  • 1 cup fresh blackberries
  • 1/2 cup fat-free sour cream
  • 2 egg whites
  • 1/2 cup white sugar
  • 3 tbsp. flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. vanilla

Step 1

Combine baking mix, 1 1/2 tsp. white sugar, milk and lemon rind together in a large bowl. Press with floured fingers into bottom and up the side of a pie dish that has been prepared with cooking spray. If it gets sticky put a little oil on your fingers. Place berries onto crust.
Mix sour cream, egg whites, 1/2 cup sugar, flour, spices and vanilla together and pour over fruit. Cover the edges of crust with foil.
Place in the oven and bake at 450 degrees for approximately 10 minutes. Reduce heat down to 350 degrees and bake for approximately 30 minutes or until center is set.
Serve topped with whipped cream. (If using frozen berries be sure to add a little corn starch to the berries to help them set up.)
