Ingredients
- 2 1/2 lbs Chicken Legs & Thighs
- 1 cup Whole Wheat Flour
- 1 Tbsp Cornstarch
- 1 1/4 cup Diet Lemon-lime Soda
- 3/4 tsp Garlic Powder
- 1/4 tsp Cayenne Pepper, adds spice
- 6 cup Unsweetened Flake Cereal
- Nonstick Cooking Oil Spray
- Salt & Pepper

Step 1
Whisk the soda, flour, cornstarch, salt, garlic powder, and cayenne pepper until smooth. Allow to bubble and flatten out.
Preheat oven to 410 degrees.
Crush flake cereal in a large plastic bag, and pour into another bowl. Dip chicken pieces into the wet batter, and allow any excess batter to fall off. Then, gently roll the chicken pieces in the corn flake batter. Place chicken pieces onto a wax paper lined cookie sheet and spray liberally with cooking spray.
Place cookie sheet in the middle rack of the oven and bake for one hour or until crispy, brown, and cooked through.
