Ingredients
- Italian salad dressing
- 1 firm avocado
- 1 can (15 oz.) black eyed peas, drained
- 1 can (11 oz.) corn kernels, drained
- 2/3 C parsley
- 2/3 C sweet white onions, chopped
- 1/2 lb. Roma tomatoes, coarsely chopped
- Salt and pepper

Step 1
Peel, pit and cut avocado into 1/2 inch cubes. Add all other ingredients except Italian dressing to avocado and gently mix. Add Italian dressing and gently mix again. Eat with tortilla chips.
