Ingredients
- Apple cider vinegar dressing
- 2 tbsp orange juice
- 2 tbsp honey
- 1 clove garlic, minced
- 4 cups curly endive, torn
- 3 cups thinly sliced fennel bulbs
- 1 cup cubed apple or pear
- 1.2 cup coarsely chopped walnuts, toasted
- 1/2 cup thinly sliced red onion
- 1/2 cup crumbled blue cheese, feta or goat cheese
- Sea salt
- Freshly ground black pepper

Step 1
For the dressing, mix cider vinegar, oil, mustard, orange juice, honey and garlic. Cover and chill.
In a large bowl, mix the endive, fennel, apple, walnuts, red onion and cheese. Drizzle with the dressing, to coat. Season with salt and pepper. Transfer to a serving platter.
