Ingredients

  • Non-aerosol cooking spray
  • 1 1/2 cups thinly sliced red onion
  • 2 cloves garlic, pressed
  • 1 1/2 cups shredded low fat Cheddar cheese
  • 12 slices whole wheat bread
  • 3 cups spinach leaves
  • 12 (1/4-inch) slices tomato
  • 9 slices cooked center-cut bacon

Preparation

Step 1

Heat a large skillet coated with cooking spray over medium-low heat; add onion and garlic; cook for 10 minutes or until tender and golden brown, stirring occasionally. Sprinkle 2 tablespoons of cheese over each of 6 bread slices; top each slice with 1/2 cup of spinach, 2 tomato slices, 2 tablespoons of onion mixture and 1 1/2 bacon slices. Sprinkle each with 2 tablespoons of cheese then top with remaining bread slices. Raise skillet heat to medium and re-coat with cooking spray. Place sandwiches in pan and cook for 3 minutes per side or until golden brown and cheese melts.

SERVING SUGGESTION: A big bowl of coleslaw (use a ready-made mix and toss with mayo and a little rice vinegar); add a bowl of raw baby carrots.
VEGETARIAN: Omit bacon OR use soy bacon.
KOSHER: Omit bacon OR use soy bacon.
GLUTEN FREE: Use gluten free bread.
