Ingredients
- 10 8-in flour tortillas
- 1 lb shredded chicken or pork
- 1 1/2 cups shredded Monterrey jack cheese (or cheddar)
- 1/4 cup butter
- 1/4 cup flour
- 15 oz chicken broth
- 8 oz sour cream
- 4 oz can green chilies

Preparation
Step 1
Preheat oven to 400 degrees.
Grease a 9x13 baking dish.
Divide chicken and cheese evenly in flour tortillas. Place in baking dish, seam down.
In large skillet, melt butter. Add flour to make roux. Whisk in chicken broth. Bring to a boil, stirring frequently. Remove from heat. Stir in sour cream and chilies. Pour over enchiladas. Top with shredded cheese(s).
Bake 20 minutes until bubbly.
