K's Shrimp Scampi Dip

Ingredients
- 4 T. Butter
- 1 -1/2 lbs. Shrimp, peeled and roughly chopped
- (1) 6 oz can Lump Crabmeat
- Cajun Seasoning to taste (optional)
- 6 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1/3 cup white wine with splash of sherry
- 4 T. lemon juice
- Kosher salt and pepper to taste
- 8 oz. reduced fat cream cheese, softened
- 1/2 cup reduced fat sour cream
- 5 T. reduced fat mayonaise
- 8 crumbled Ritz crackers
- 1 T. dried parsley
- 1/2 cup Italian cheese
- 1/2 cup Colby Jack cheese
- 4 T. grated Parmesan
- 4-5 additional crumbled Ritz crackers for topping

Step 1
Preheat oven to 350. Lightly grease a 9" pie plate or dish with cooking spray.
Melt butter in large skillet over med-high heat. Add shrimp, garlic and red pepper flakes and sprinkle with desired amount of Cajun Seasoning. Cook, stirring about 2 minutes. Stir in wine and lemon juice; add salt and pepper to taste. Remove from heat; stir in cream cheese, sour cream, mayonnaise, parsley, crackers, 1/4 cup Italian cheese, 1/4 cup Colby Jack cheese, Parmesan and crabmeat.
Spread mixture in prepared dish. Sprinkle with remaining 1/4 cup Italian, 1/4 cup Colby Jack cheeses and crumbled Ritz crackers.
Bake 20-25 minutes. Let sit 5 minutes. Serve with crackers. DELICIOUS!
