Ingredients
- 1 1/2 cups sweetened flake coconut
- 1 1/4 cup all purpose flour
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 1/2 sticks cold butter cut in small pieces
- 1 1/2 cups oats
- 3/4 cup seedless raspberry jam

Preparation
Step 1
preheat oven to 375 - butter 13 x 9 pan
toast 3/4 cup coconut and cool
combine flour, sugars salt in processer an pulse. add butter pulse to combine to dough. transfer to bowl add oats and toasted coconut.
reserve 3/4 cup dough, press rest in buttered pan. top with jam. crumble rest of dough on top and sprinkle with untoasted cocout.
bake 20-25 min, cool completely.
