Ingredients
- Dressing:
- 8 boiled and peeled potatoes, diced (red or gold potatoes are best)
- 8 boiled, peeled and chopped eggs
- 1 cup chopped celery
- 1/4 cup finely chopped onion
- 1/4 teaspoon salt
- 3/4 teaspoon white pepper (to taste)
- 4 eggs, beaten
- 1 cup sugar
- 1/2 cup cider vinegar
- 4 tablespoons prepared mustard
- 2 cups mayonnaise (not salad dressing)

Preparation
Step 1
Mix beaten eggs, sugar, vinegar and mustard in microwave-safe container and microwave on high until thick. (May also be cooked on top of stove, medium heat, stirring constantly.) Cool slightly, and add mayonnaise. Mix with potatoes, eggs, celery and onion. Salt and pepper to taste. Chill several hours before serving. Serves 12-14 people.
