Ingredients

  • 1 (3-4 lb chicken) cut into pieces
  • 4 T unsalted butter
  • Seasoning paste
  • 5 T Chef Paul's Meat magic
  • 1 T plus 1 1/2 t soy sauce
  • 1 T plus 1 t onion powder
  • 1 T plus 3/4 t ground ginger
  • 1 T grated lemon peel
  • 4 bay leaves
  • 1 T grated lime peel
  • 1 1/4 t ground cardamon
  • 1 1/4 t ground cinnamon
  • 1 1/4 t ground nutmeg
  • 1 1/4 t ground savory
  • 3/4 t ground allspice
  • 3/4 t ground Pasilla chile peppers

Preparation

Step 1

Combine the Seasoning Paste ingredients in a large bowl and mix well. Place the chicken pieces and bay leaves in the bowl and rub the pieces evenly with the paste. Cover the bowl tightly w/ plastic wrap and refrigerate 6-8 hrs.

Before cooking bring chicken to room temperature, scrape off as much seasoning and combine with butter. Baste chicken several times as it grill with the butter-paste mixture.
