Ingredients
- 1 (3-4 lb chicken) cut into pieces
- 4 T unsalted butter
- Seasoning paste
- 5 T Chef Paul's Meat magic
- 1 T plus 1 1/2 t soy sauce
- 1 T plus 1 t onion powder
- 1 T plus 3/4 t ground ginger
- 1 T grated lemon peel
- 4 bay leaves
- 1 T grated lime peel
- 1 1/4 t ground cardamon
- 1 1/4 t ground cinnamon
- 1 1/4 t ground nutmeg
- 1 1/4 t ground savory
- 3/4 t ground allspice
- 3/4 t ground Pasilla chile peppers

Preparation
Step 1
Combine the Seasoning Paste ingredients in a large bowl and mix well. Place the chicken pieces and bay leaves in the bowl and rub the pieces evenly with the paste. Cover the bowl tightly w/ plastic wrap and refrigerate 6-8 hrs.
Before cooking bring chicken to room temperature, scrape off as much seasoning and combine with butter. Baste chicken several times as it grill with the butter-paste mixture.
