Ingredients
- Mustard Cider Vinaigrette:
- 1/3 C olive oil
- 1 t sugar
- 1 T chopped cilantro
- 1/3 C cider vinegar
- 1 t Dijon mustard
- Salt & Pepper
- 1 C Sweet Pepper Salsa
- 3/4 lb tiny new potatoes, quartered
- 1/2 lb sugar snap peas
- 6 C mixed salad greens
- 8 oz cooked flank steak, sliced thin

Preparation
Step 1
Prepare Mustard Cider Vinaigrette; cover & chill
Grill flank steak
Cook potatoes in small amount of salted water for 10 min. Drain; rinse under cold water. Drain again, set aside. Add sugar snap peas & simmer 5 min. Drain & rinse under cold water.
In large bowl combine salad greens, potatoes, sugar snap peas. Toss flank steak with 1/2C of vinaigrette. Add remaining dressing to greens; toss & top with flank steak
