FRUIT COCKTAIL CAKE

Ingredients

• ICING:
• 4 C flour
• 4 tsp baking soda
• 2 C sugar
• 1/3 C oil
• 4 eggs
• 2 cans fruit cocktail -w/ juice (soup can size)
• 12 oz chocolate chips
• 1-1/2 C coarsely chopped nuts
• 1 orange rind
• 1/2 stick marg or butter
• 3 TBL frozen orange juice concentrate
• 1 C powdered sugar

Preparation

Step 1

in lg. bowl mix all ingredients thoroughly
pour into baking pan
bake for 1 HR 10 min or until toothpick test proves its done
remove cake from oven
let stand abt 10 min
pour icing over it

melt butter or marg
add orange juice concentrate & powdered sugar

heat until melted
