Creamy Cheese Spread W/Brandied Cranberries

Ingredients
- 1 8oz. Neufchatel chesse, softened
- 1 8oz. crumbled blue cheese
- 1 Tbs. chopped onion
- 4 oz. white shredded cheddar cheese
- 1 cup cranberries
- 1/4 cup sugar
- 3 Tbs. frozen apple juice concentrate, thawed
- 3 Tbs. brandy

Step 1
1. Line a flat, shallow 1 1/2 cup bowl with plastic wrap. In food processor bowl combine cheeses and onion. Cover, process until well blended. Spoon cheese mixture into lined bowl. Smooth top, cover and refrigerate.
2. In a small saucepan combine cranberries, sugar and apple juice. Cook over low heat until juices flow, and berries pop, stirring frequently. Cook 3 minutes or until slightly thickened. Remove from heat, cool 5 minutes. Stir in brandy. Cover and refrigerate 30 minutes, or until cooled.
3. About 30 minutes before serving time remove cover from cheese and invert onto plate. Remove plastic wrap and let sit at room temperature for best flavor. Spoon cranberry sauce over before serving with assorted crackers.
