Potato Soup

Ingredients

  • 1 bag potatoes
  • 2 sticks of butter
  • 1/2 cup chopped onion
  • 1 medium stalk celery, diced
  • 1 carton (32oz) chicken broth
  • 1 cup of water
  • 2 cups of milk
  • 1 bag (8oz) American - Cheddar cheese blend
  • 1/4 (2.8oz) real bacon bit pieces
  • 1 container mashed potatoes

Preparation

Step 1

1.) In a large pan - dutch oven, wash and cut, thin the potatoes. Mix potatoes, Onion, celery, broth, water, salt, pepper (to taste) 4 tablespoons of butter. Bring to a boil and cook until potatoes are tender, about 30-45 min
2.) In a smaller pan, mix 1 stick of butter, 2 cups of milk and 6 tablespoons of mashed potatoes. Stir on low heat until mixed well. Add to the potatoes . Simmer about 45 min. Until it thickens Garnish individual serving with bacon, cheese, and green onion
