Chinese Barbecued Spareribs

Ingredients
- 2 lb spareribs in one piece, excess fat removed
- 1/4 cup soy sauce
- 2 Tbsp honey
- 2 Tbsp hoisin sauce
- 2 Tbsp white vinegar
- 1 Tbsp chinese rice wine or dry sherry
- 1 tsp finely minced garlic
- 1 tsp sugar
- 2 Tbsp chicken stock
- Plum sauce

Combine the soy sauce, honey, hoisin sauce, vinegar, wine, garlic, sugar and chicken stock in a small bowl and mix well. Put the spareribs in a shallow pan or dish and cover them well with the marinade. Let them marinate for 3 hours at room temp, or six hours in the fridge, turning and basting several times. Heat the oven to 375° f. Fill a shallow roasting pan or baking dish with water and place it on the lowest rack in the oven. Get a couple of s-hooks and attach them to each end of the fat part of the spareribs, and use the hooks to suspend the ribs from the highest rack in the oven, directly above the water pan. Roast the ribs, undisturbed, for about 45 minutes, then raise the heat to 450° f and roast for about 15 minutes longer, until the ribs are crisp and a deep golden brown. To serve, separate the ribs and, if you like, use a cleaver to cut them in half crosswise. They can be served hot or cold with plum sauce.
