Ingredients

  • 2 1/2 cups chopped cooked chicken (about 13 oz.)
  • 1 can reduced sodium chicken broth
  • 1 11-oz. can whole kernel corn with sweet peppers
  • 1 can cream of potato soup
  • 1 cup water
  • 1 4-oz. can diced green chile peppers
  • 2 Tbs. snipped fresh cilantro
  • 1/2 of a 1-1/4 oz. pkg. taco seasoning mix (about 2 Tbs.)
  • 1 cup fat free sour cream
  • 1/2 cup shredded cheddar cheese
  • Baked tortilla chips (optional)

Step 1

Combine all ingredients, except sour cream, cheese, and chips, in a 3-1/2 qt. slow cooker. Cover: cook on low heat setting for 6 to 8 hours, or on high setting for 3 to 4 hours. Stir 1 cup of the hot mixture into the sour cream in a small bowl. Stir sour cream mixture into cooker. Let stand, covered, for 5 minutes. Sprinkle cheddar cheese over individual servings. Serve with tortilla chips.
