Ingredients

  • 3/4 cup yellow cornmeal
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 1/2 cups low-fat milk
  • 1/2 tsp hot sauce
  • 2 large egg yolks
  • 1 T butter
  • 1/2 tsp baking powder
  • 3 large egg whites

Step 1

Preheat oven 350. Combine first 4 ingredients in a large saucepan; stir in milk and hot sauce. Cook over medium heat until thicken (15 mins) stirring constantly. Place egg yolks in medium bowl. Spoon 1/2 cup hot cornmeal mixture into yolks, mix and repeat. Add butter and stir till melted. Beat baking powder and egg whites on high till stiff peaks form. Fold 1/4 of mixture into cornmeal mixture and repeat 3 times. Gently spoon into 7x11 greased baking dish. Bake 40 mins or till puffy. Serve immediately.
