Feta Stuffed Tomaotes

Ingredients
- 4 large tomatoes
- 4 oz crumbled feta cheese
- 1/4 cup fine, dry breadcrumbs (I like to use panko instead)
- 2 T chopped green onion
- 2 T chopped fresh parsley
- 2 T olive oil
- 1/4 t salt
- 1/4 t pepper

Preparation
Step 1
1. Preheat oven 350'. Cut tomatoes in half horizontally. Scoop out pulp from each tomato half, leaving shells intact. Discard seeds and coarsely chop pulp.
2. Stir together pulp and all other ingredients.
3. Spoon mixture into shells.
4. Place in a 13x9 pan. Bake 350' for 15 min.
