Ingredients

  • 2 cans (14-1/2oz each) chicken broth
  • 3 C cubed cooked chicken
  • 2 C frozen corn
  • 1 can (10-3/4oz) tomato puree
  • 1 can (10-oz) diced tomatoes & green chilies
  • 1 lg onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 1-2 tsp grd. cumin
  • 1 tsp salt
  • 1/2 to 1 tsp chili powder
  • 1/8 tsp pepper
  • 1/8 tsp cayenne pepper
  • 4 white or yellow corn tortillas (6") cut into 1/4" strips

Preparation

Step 1

in 5-qt slow cooker, combine 1st 13 ingredients
cover & cook on low for 4 hrs

place tortilla strips on ungreased baking sheet
bake @375 for 5 min
turn
bake 5 min longer

discard bay leaf from soup
serve w/ tortilla strips
