- 1 cup sugar
- 2 tablespoons water
- 1 drop lemon juice (optional)
- 1 8-ounce package cream cheese
- 1 can sweetened condensed milk
- 1 can evaporated milk
- 1 teaspoon vanilla extract
- 6 large eggs

Step 1
Make caramel first.
Mix sugar, water and lemon juice in a saucepan. Cook over medium heat on medium burner until sugar is melted, thickened and amber in color. Do not over stir and do not overcook. Pour caramel into microwave-safe round container and swirling to cover the bottom and sides. Set aside.
Beat cream cheese, sweetened condensed milk and vanilla in a large mixing bowl at medium speed with an electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Stir in milk.
Pour cream cheese mixture over caramel.
Microwave for 8 minutes. Let stand 1 minute. Test for doneness with toothpick. Add minutes as needed. Let cool completely. Cover and refrigerate.
When ready to serve, invert onto a plate and cut into 8 wedges.
