Ingredients
- 1 LB beef stew meat
- kosher salt & black pepper
- 1 TBL vegie oil
- 1 can fire-roasted tomatoes or diced tomatoes (28-oz)
- 1 can black beans, drained & rinsed (15oz)
- 1 tube mexican chorizo sausage (10oz)
- 1 C frozen corn kernels, thawed
- 2 TBL minced garlic
- 2 TBL chili powder
- 1-2 TBL minced chipotle chili pepper in adobo sauce
- 1 TBL grd. cumin
- 1 TBL minced fresh oregano leaves or 1 tsp dried oregano

Preparation
Step 1
season stew meat w/ S & P
brown meat in oil in skillet over med high heat for 5 min
combine all ingredients in 4-6 qt slow cooker
use wooden spoon to break chorizo into chunks
cover chili
cook until beef is tender
on high setting 3-4 HRS or
low setting for 7-8 HRS
