Cajun-Style Chicken Wings

Ingredients
- FOR THE WINGS:
- 16 chicken wings (abt 3 LB)
- 1 TBL cajun seasoning
- 1 C chili sauce
- 1/2 C minced onion
- 1/2 C minced red bell pepper
- 2 TBL quick cooking tapioca, ground
- 1 jalapeno pepper, minced
- 2 tsp minced garlic
- Sriaccha or hot-pepper sauce to taste
- FOR THE DIPPNIG SAUCE:
- 1 carton sour cream (8oz)
- 2 TBL fresh lemon juice
- 1 TBL minced fresh cilantro
- 1/2 tsp minced lemon zest

Preparation
Step 1
preheat broiler to high w/ oven rack 4-5" from heating element
line bottom of broiler pan w/ foil
coat to pan w/ nonstick spray
cut tips from chicken wings
discard tips
cut each wing at joint to make 2 pieces
toss w/ seasoning
transfer chicken to prepared pan
broil turning once, until wings are no longer pink, 12-15 min
transfer chicken to 3-1/2-4-QT slow cooker
add sauce mixture, tossing to coat wings
cover slow cooker
cook, stirring occasionally, on low heat for 3-4 HRS
serve wings, or keep them covered in slow cooker on warm heat for up to 2 hrs longer
combine sour cream, lemon juice, cilantro & zest for dipping sauce in sm. bowl
serve dipping sauce w/ wings
