Ingredients

  • FOR THE WINGS:
  • 16 chicken wings (abt 3 LB)
  • 1 TBL cajun seasoning
  • 1 C chili sauce
  • 1/2 C minced onion
  • 1/2 C minced red bell pepper
  • 2 TBL quick cooking tapioca, ground
  • 1 jalapeno pepper, minced
  • 2 tsp minced garlic
  • Sriaccha or hot-pepper sauce to taste
  • FOR THE DIPPNIG SAUCE:
  • 1 carton sour cream (8oz)
  • 2 TBL fresh lemon juice
  • 1 TBL minced fresh cilantro
  • 1/2 tsp minced lemon zest

Preparation

Step 1

preheat broiler to high w/ oven rack 4-5" from heating element
line bottom of broiler pan w/ foil
coat to pan w/ nonstick spray

cut tips from chicken wings
discard tips
cut each wing at joint to make 2 pieces
toss w/ seasoning

transfer chicken to prepared pan
broil turning once, until wings are no longer pink, 12-15 min

transfer chicken to 3-1/2-4-QT slow cooker
add sauce mixture, tossing to coat wings
cover slow cooker
cook, stirring occasionally, on low heat for 3-4 HRS
serve wings, or keep them covered in slow cooker on warm heat for up to 2 hrs longer

combine sour cream, lemon juice, cilantro & zest for dipping sauce in sm. bowl
serve dipping sauce w/ wings
