Ingredients

  • 10 skinned chicken thighs (~3 lbs)
  • 1/2 t salt
  • 1/2 t pepper
  • Orange-Jalapeno Glaze
  • 2 c orange juice
  • 3 med jalapeno peppers, seeded and finely chopped
  • 4 garlic cloves, minced
  • 3 T grated orange rind
  • 1 T olive oil
  • 3 T maple syrup
  • 1 t salt
  • 1/2 t ground ginger
  • 1/2 t pepper

Preparation

Step 1

1. Stir all Orange-Jalapeno ingredients in med saucepan; bring to a boil over med high heat. Reduce heat to medium, and cook, stirring often, 15 mins or until reduced by half.

2. Remove and reserve 1 cup of glaze.

3. Rinse chicken and pat dry. Sprinkle evenly w/ salt and pepper. Brush chicken lightly with remaining glaze.

4. Grill over med high heat (350-400) 8-10 each side or until done, basting each side with reserved glaze during last few mins.
