  • FILLING:
  • 2 cups sugar
  • 2 cups all-purpose flour (must use all-purpose flour)
  • 1 cup butter or margarine
  • 1 cup grated coconut
  • 1 teaspoon baking soda
  • 1 cup raisins
  • 3 eggs
  • 1 cup buttermilk
  • 1 cup pecans
  • 1 cup jam or jelly
  • 1 teaspoon salt

  • 2 cups sugar
  • 4 tablespoons flour
  • 1 1/2 cups evaporated milk
  • 1 cup butter
  • 1 1/2 cups coconut
  • 1 tablespoon vanilla

Preparation

Step 1

Cream butter and sugar; add eggs then all other ingredients, saving flour till last. Line the bottom of 3 pans with wax paper cut to fit. Bake in a moderate oven, about 300deg, about 45 minutes.

Cook sugar, flour and cream till nearly done. Add butter and when done, add coconut and vanilla.
